Mini Greek Lamb Loaves

Mini lambloafs

Ingredients:
2 lbs of ground lamb
1 small tomato
1/2 onion
1/2 cup of sliced kalamata olives
1/2 cup sliced pepperoncini peppers
4 minced garlic cloves / 2 tbsp garlic paste
1/2 cucumber
12 tbps/3 egg whites
1 cup quick cooking oats
1 tsp salt
1 tbsp ground black pepper
1/2 cup low-sodium feta

Directions:

  • Preheat oven to 375 °F.
  • Finely dice the onion and tomato then heat on low for 5 minutes in a pan
  • Mix the ground lamb with the egg whites then add the onions, tomatoes, garlic, cucumber, pepperoncini peppers and olives and let cool
  • Once cool to touch add the oats, salt and pepper
  • Mix well and either roll into equal sized balls and place in an oiled muffin tin or even press into oiled bread loaf tin.
  • Sprinkle feta evenly across the top of the meat

For muffins bake for 45 minutes and let cool. For loaf bake for 1 hour 15 minutes.
